Definitely looks a bit soggy, Or is this from frost? All the same, they are hardy plants, nip off the head/s and dry them out. You could then try opening the flower head and separate the seeds.I’ve done this and had some success so it’s worth a shot.
BTW. Of the seeds I sowed ( the ones I did a post of) 6 have sprouted. Looking healthy too.
It’s chilly, but by no means frosty! Yeah it is just wet wet wet here. I can try, but I still get the feeling that no local insect sees them as something to investigate.
Ah, that looks like the last batch of flowers I tried to grow when I lost the ability to water them. Others in the family said they would do it, but no one remembered and all my flowers died. Now I am feeling stronger and ready to try a few, just a few, pots again. Hugs

The plants themselves overwintered! But seed looks like a tough call here. I’ve heard everyone saying how hot it was, especially in your area. Glad you didn’t melt!
